Why Worcestershire Sauce Works

Baked beans are typically sold in a plain, sweetened tomato sauce with minimal seasoning, which can make them taste bland when served on toast. Worcestershire sauce adds a rich savoury (umami) flavour along with sweet, spicy, and salty notes, creating a more satisfying dish. Katherine McPhillips, who tested various condiments, found that Worcestershire sauce was the most effective ingredient for improving the taste of canned beans.

Simple Recipe for Enhanced Beans on Toast

To make the upgraded dish, you need one can of baked beans, two slices of bread, one teaspoon of Worcestershire sauce, grated cheese, butter (optional), and black pepper. Start by toasting the bread and heating the beans in a saucepan over medium heat. Once simmering, stir in the Worcestershire sauce and season with pepper. Cook for two minutes until bubbling, then remove from heat. Butter the toast, spoon the beans on top, scatter with cheese, and add a few extra drops of Worcestershire sauce. Place under a grill or in an oven preheated to 200°C for two minutes until the cheese is bubbling. The entire process takes under five minutes.
