Gordon Ramsay has opened his latest restaurant in the north west inside the newly-opened Fairmont Cheshire, The Mere, following a £90m transformation of the golf and spa resort near Knutsford.
Gordon Ramsay at The Mere is one of three new dining spaces in the hotel, offering a fine dining experience with prices to match. The menu is similar to that at his Savoy Grill in London, which is also part of The Fairmont hotel group.
Dining experience and views
The restaurant sits at the heart of the hotel, with views over a new terrace, landscaped gardens and the lake. Diners can choose to eat inside or on the lakeside terrace, which is dog-friendly.
Inside, there is an opulent interior with a cocktail bar, intimate booths, marble-topped tables and red seating. It is currently open for breakfast and dinner, with Sunday lunch launching next month.
Signature dishes and prices
The dinner menu features Ramsay's signature beef wellington at £60 per person, along with meats cooked on a Josper charcoal grill: whole seabass (£40), British Pork Chop (£38), and beef fillet (£59). Desserts include sticky toffee pudding and ice cream (£14) and raspberry soufflé (£15).
Breakfast is served daily for guests and non-guests, offering a classic British breakfast (£22), omelette Arnold Bennett (£22), avocado and tomato (£18), and pancakes (£15). A children's menu includes grilled chicken and mash (£12), sole goujons and fries (£12), red pepper risotto (£10), and strawberry ice cream sundae (£6).
Statement on the opening
A statement from Fairmont said: "Fairmont properties are social epicenters, frequented by guests and locals alike. The culinary cognoscenti will applaud the arrival of Gordon Ramsay at The Mere, serving as the main dining destination and bringing the world-renowned chef's celebrated dining vision to the heart of Cheshire."
The statement added that the restaurant features "an elevated and exclusive environment, with thoughtful and bespoke design features including textured walls and decedent velvet seating throughout."
Empire and hotel history
Gordon Ramsay Restaurants was founded in 1998 and now has 29 restaurants in the UK and 65 internationally. Fairmont Cheshire, The Mere opened in July after a three-year, £90m refurbishment of the 157-acre country estate. Formerly known as The Mere, it hosted golf events, celebrity dinners and weddings.
Other eateries in the hotel include The Orangery, serving afternoon tea and transforming into a champagne and oyster bar; The Club Lounge, offering globally inspired and Indian-influenced dishes; and a Spa Cafe in the revamped Fairmont Spa.
