Shepherd's pie, a classic British comfort dish, typically features minced meat and vegetables topped with mashed potato and baked until golden. However, celebrity chef Heston Blumenthal's version, served at his one-Michelin-star pub The Hinds Head in Bray, Berkshire, includes a surprising twist.
The Secret Ingredient: Lamb Shanks
Chefs Jack Croft and Will Murray, creators of acclaimed London restaurants Fallow, Roe, and FOWL, recently shared Blumenthal's recipe on YouTube. Jack explained that while shepherd's pie is iconic, few cook it correctly. The key is using lamb shanks alongside minced lamb, which Jack calls Blumenthal's "secret weapon." This addition creates a richer, more textured filling.
Five Essential Prep Steps
Jack recommends completing these steps the night before for best results:
- Set your oven to 85°C.
- Dust the lamb shanks with plain flour, patting off excess.
- Heat a frying pan with oil on medium-high heat.
- Sear the lamb shanks on all sides until golden, then transfer to a casserole dish.
- Add chicken and beef stock, cover with a cartouche and lid, and braise for nine hours.
The next day, drain the stock into a saucepan and reduce by half over medium-high heat. Pull the lamb shanks off the bone, run a knife through the meat, and remove from heat. Add rosemary and let infuse for 20 minutes. Finally, combine the shanks with lamb mince and vegetables for a hearty, flavourful filling.
