Why Celery Works
Celery is about 95% water, which bread can absorb as it loses moisture. The experts noted, “The unique properties of celery make it an interesting candidate for preserving bread. One of the most remarkable properties of celery is its high water content, which is about 95% of its weight.”
“By placing one or two celery stems inside a bread bag, the moisture within the stems can be transferred to the surrounding environment.” Celery also contains natural antibacterial compounds like phthalates and apigenin, which help prevent mould.
Additional Benefits
The vegetable emits ethylene gas, a plant hormone that ripens fruits like bananas and apples. For bread, this gas slows starch degradation, extending shelf life.
Storage Tips
Place one or two celery sticks next to the loaf on the worktop. Use a bread bin, fabric bag, or paper bag for ventilation. Avoid original plastic packaging, as it traps moisture. Keep bread away from heat sources and do not refrigerate, as cold crystallises starch.
