The filling calls for 280 grams of mini eggs, crushed, 600 millilitres of double cream, 140 grams of icing sugar, sifted, 550 grams of full-fat cream cheese, and the juice of half a lemon. For optional decoration, approximately 74 grams of mini eggs can be used.
Step-by-Step Preparation Method
Begin by thoroughly crushing the digestive biscuits and combining them with the melted unsalted butter to create a uniform, crumbly mixture. Press this mixture firmly into a 7-inch loose-bottomed tin, then place it in the refrigerator to set while you prepare the filling.
For the filling, start by whipping the double cream until soft peaks form. Next, add the sifted icing sugar, full-fat cream cheese, fresh lemon juice, and the crushed mini eggs. Blend all these ingredients together until fully combined and smooth.
Spoon this creamy mixture into the tin, directly atop the prepared biscuit base. Use a spoon to level the top evenly. Refrigerate the cheesecake for at least four hours to allow it to set completely. Once set, carefully remove it from the tin and garnish as desired. A simple sprinkle of whole mini eggs on top works beautifully, though you could also add whipped cream or extra chocolate decorations.
