For the dressing: one small garlic clove (grated), 1cm fresh root ginger (peeled and grated), two spring onions (white part finely chopped, green part thinly sliced), one red finger chilli (very finely chopped), half a lime (juice only), one tablespoon of soy sauce (gluten-free if required), two tablespoons of olive oil, one teaspoon of sesame oil, and half a teaspoon of caster sugar.
Method
Heat the oven to 230°C (210°C Fan) or its highest setting. In a shallow bowl, combine the lime juice, soy sauce, and sugar, stirring until the sugar has fully dissolved. Place the salmon fillets into the bowl and coat thoroughly with the mixture. Leave to rest, skin side up, for 10 minutes.
Meanwhile, lightly grease a roasting tin with oil. Place the broccoli and green beans into a bowl and cover with boiling water. Leave to stand for five minutes, then drain thoroughly. Position the salmon fillets, skin-side down, at one end of the roasting tin. Tip the broccoli, beans, and peppers into the opposite end of the tin. Scatter over the red peppers and pour the soy sauce mixture on top. Toss the vegetables until well coated in the sauce.
Loosely cover the vegetables with kitchen foil, leaving the salmon uncovered. Roast for 12 minutes. To prepare the dressing, combine the garlic, ginger, white part of the spring onions, chilli, lime juice, soy sauce, olive oil, sesame oil, and sugar in a small jug, then mix thoroughly. Drizzle the dressing over the vegetables, scatter the green parts of the spring onion on top, and serve.
