A recipe developer has shared a simple way to elevate cabbage and leeks into a creamy, mustard-flavoured side dish that she calls the “ultimate roast dinner side dish.” The recipe, which uses Dijon mustard as a key ingredient, has attracted more than 1.6 million views online.
A simple fridge ingredient transforms bland greens
TikTok creator Amy Sheppard demonstrated how to add flavour to vegetables like cabbage and leeks. Instead of boiling the greens, she recommends pan-frying them and then stirring in a combination of cream and a teaspoon of Dijon mustard. The mustard acts as a natural emulsifier, adding sharp acidity and a savoury, umami kick while making the vegetables creamy.
In her video, Sheppard said: “This is the ultimate roast dinner side dish and it's probably the best recipe I've ever shared. It goes with beef and chicken...it even goes with turkey. It's creamy and mustard-y and it's literally autumn on a plate. I now can't have a roast dinner without it.”
Recipe for creamy cabbage and leeks
The recipe serves four as a side dish. Ingredients include 40g butter, two finely sliced leeks, six savoy cabbage leaves with the tough stem removed and finely sliced, one tablespoon of plain flour, 200ml chicken stock, one teaspoon of Dijon mustard, 120ml single cream, and salt and ground black pepper.
To prepare, melt the butter in a large non-stick frying pan. Add the leek and cabbage and fry on a medium heat for five to seven minutes, stirring regularly until soft. Stir in the flour and cook for a minute until bubbling. Add half the stock and stir until it comes to the boil, then add the remaining stock and repeat. Stir in the cream, mustard, and season generously with salt and pepper. Gently bring it to the boil until it is just bubbling before serving.
