A former Great British Bake Off contestant has shared a quick and easy scone recipe that replaces eggs, butter and milk with a single ingredient: houmous. Briony May Williams, a baker and television presenter, demonstrated the hack in a TikTok video, where she called the results 'insanely delicious'.

Houmous as a Substitute

Instead of the traditional combination of butter, milk and eggs, houmous serves as a straightforward substitute for all three. Its moisture content binds effortlessly with plain flour and baking powder to produce a swift and simple dough. Briony used classic houmous but noted that any flavour works.

To introduce additional depth of flavour, she incorporated mixed herbs and smoked paprika. Once all the components are combined in a bowl, they come together quickly to form the dough. The entire process takes mere seconds.

Air Fryer or Oven

Briony opted to cook her scones in an air fryer at 180°C for eight minutes, though a conventional oven at 200°C (fan) for ten minutes works equally well. Upon removing the scones from the oven, Briony exclaimed: 'I'm sorry? What? Look how good they look. Shut up, shut up. I'm gonna be making these all the time, they're insanely delicious.'

Briony's clip has accumulated over 39,700 views, garnering above 1,200 likes and over 100 comments. Viewers praised the recipe, with MsMoneyPenny posting: 'They look delish! Recipe for Houmous Scones

Ingredients: 160g hummus, 65g plain flour, one tsp baking powder, two tsp dried chives, one tsp smoked paprika, 1/2 tsp salt, one tbsp milk alternative, two tsp mixed seeds. Method: Combine all ingredients in a bowl to create a soft dough. Separate into four portions. Position on a baking tray, glaze with milk and sprinkle with seeds. Cook in oven at 200°C (fan) for 10 minutes or air fryer at 180°C for eight minutes. Cool briefly, serve and enjoy.
