Bar Antoine in London has created the Jardin Éphémère, a bright, floral summer spritz inspired by French gardens. The cocktail combines elderflower liqueur, apple juice, poire Williams eau-de-vie, and absinthe, topped with dry champagne and a splash of soda water.
Ingredients and Method
For one serving, you will need 35ml elderflower liqueur (St-Germain recommended), 10ml good apple juice, 15ml eau-de-vie de poire Williams (Miclo suggested), 2 dashes absinthe, dry champagne to top (Moët & Chandon Brut Impérial suggested), 1 splash soda water, and a rosemary sprig for garnish.
Place the elderflower liqueur, apple juice, poire Williams, and absinthe in a shaker filled with ice. Shake hard for about six seconds. Double strain into a wine glass, add a couple of fresh ice cubes, then top with champagne. Finish with a splash of soda, garnish with rosemary, and serve.
