A former Great British Bake Off contestant has shared a recipe for homemade Easter cookies that he claims taste 'better' than the viral speckled egg biscuits sold by Marks & Spencer. Rowan Claughton, who appeared on the baking show in 2023, posted a TikTok video demonstrating how to make the treats, which have become a seasonal sensation.
In the clip, which has been viewed nearly 5,000 times, Claughton said: 'We've all seen the speckled egg cookies on your for you page, and dare I say, these are better than the real thing. And not only are they so easy to make, they smell delicious, they look great, and they taste even better.' He added: 'I mean, look at my reaction, I must have done something right.'
The recipe includes a generous portion of Corn Flakes for extra texture, and uses Cadbury Mini Eggs, though other supermarket alternatives work equally well. Claughton's version aims to replicate M&S's popular bakery item, which can be difficult to find if the store is out of stock or not nearby.
To make the cookies, preheat the oven to 180°C and line two trays with baking paper. In a large bowl, cream together butter, sugars and vanilla until smooth. Add an egg and mix, then incorporate flour and baking powder. Stir in chopped chocolate, Mini Eggs and Corn Flakes. Divide the dough into nine equal balls, place them spaced apart on the trays, and optionally add extra mini eggs and cornflakes on top. Bake for nine to 11 minutes.
