Scones are a classic afternoon tea staple, and should be tall, fluffy and served with lashings of jam and cream. Everyone has their own method and secret ingredients for creating the perfect scone, but one former Great British Bake Off contestant recently shared a surprise ingredient that can completely transform the baked good.

The Surprise Ingredient

Briony May Williams, who competed on the ninth series of the baking competition, has been testing out different ingredients to see if they “scone” in a series on TikTok. Going through the alphabet of different ingredients, for the letter ‘c’, Briony put custard to the test.

In a video from earlier this month, she said: “Does custard scone? This was the most popular ‘c’ suggestion by all of you lot, so let’s hope this works, come on.”

How It Works

Briony uses pre-made custard in place of the wet ingredients you’d need to make a scone, such as milk and butter. For her scone experiment, she only uses four ingredients, three of which are for the scone’s dough. All you need to do is simply mix the custard and self raising flour together to make the dough. Briony then portions the dough and brushes the tops with some milk for the glaze.

The results were golden, fluffy and the scones had risen just like a traditional recipe. When taking the scone out of the oven, Briony said: “Well they look golden and delicious, don’t they? It looks like a scone, like even the sides look sconey, do you know what I mean?” She continued: “Oh, the mad scientist evil genius strikes again. They’re so fluffy.”

Briony’s video has been viewed over 29,200 times, receiving 1,240 likes and 130 comments. Lisa wrote: “Birds custard powder would work better!” Mark revealed: “Just made these, very nice, but more bread roll like than scone.” Nic commented, “That's actually genius,” while Naj said, “I don’t like custard at all, I’m a cream girl! But I need to try these! Love your videos! I need to try the avocado recipe it looks delicious.” Laura agreed: “Works because custard = eggs, fat, vanilla and milk. Scone ingredients. Genius!”

Custard Scones Recipe

So if you’re looking for a cheat’s method for tasty scones, here’s how you can recreate Briony’s creation at home.

Ingredients

  • 150g custard
  • 150g self raising flour (or 125g plain flour + one tsp baking powder)
  • One tsp vanilla extract
  • One tbsp milk

Method

  1. Mix the custard, flour and vanilla together to make a soft dough. Form into a ball then cut into quarters.
  2. Place on a baking tray then brush with milk.
  3. Bake for eight minutes in the air fryer on 180℃ or 10-12 minutes in the oven on 180℃ (fan). Serve with jam (and more custard!).
