Roast Dinner Jacket Potato Recipe Praised as 'So Smart'

A woman has shared her alternative recipe for a Sunday roast, and people have said that it's so 'smart,' and that they want to try it out for themselves as soon as possible.

Looking for a different way to enjoy a Sunday roast but struggling for inspiration? One woman has shared how she makes it so much simpler for herself, with some even claiming that it looks tastier than your traditional get-up.

How She Made the Loaded Roast-Dinner Potato

Loz shared that when she found some "huge jacket potatoes" at the supermarket, she immediately knew exactly what she was going to make with them: a loaded roast-dinner potato, which completely elevated the dish to another level, and foodies were gobsmacked.

Describing her method, she explained that she put the potatoes in the microwave and then started prepping all the fillings that would go into it. First, she honey-roasted carrots by adding honey, oil, salt, and pepper, putting them in the oven at 190 degrees.

Loz then made some cauliflower cheese, and put her potatoes into the air fryer tray "with some oil, salt and pepper" for 25 minutes at 200 degrees. She added butter and flour into a pan and stirred, before adding milk and cream cheese.

The Fillings and the Finished Dish

Loz said you want it to be "quite a thick consistency but not too thick," before adding extra grated cheese on the top to make it extra delicious.

She roasted a chicken in the bag to make her life easier and made a stuffing mix as well, before frying off some onions for a gravy, which she used chicken juice and gravy granules for.

The jacket potatoes were "so crispy" when she took them out of the air fryer, and when she loaded the fillings onto them, people were salivating and wondering why they'd never tried this before. She said that they were "really soft on the inside" and "obviously added loads of butter, salt and pepper" as well.

Loz showed off her cauliflower cheese, all done, and it looked like the cheese had bubbled up and crisped to perfection. She popped it onto the potato.

Then, she added the stuffing, followed by the honey roasted carrots, then she "topped with the roast chicken," and the final component was her "nice and thick onion gravy".

"This was literally my dream meal, it was so good," Loz gushed as she showed off her finished product.

A third wrote: "That's one of the best meals I have seen in a long time, well done."

A fourth joked that they had "never seen a potato that big" in their life.
