MasterChef finalist's slow cooker swap for thick, rich curry

Dean Edwards, runner-up on MasterChef in 2006, has shared how home cooks can get restaurant-quality curry at home without using a pan. Instead, he prefers cooking curry in a slow cooker, which he says is a more economical appliance.

Simple 'dumpy' method

In a recent TikTok video, Dean said: “Did you know you can cook restaurant-style curry at home in your slow cooker? Well, this is my super simple banging butter chicken curry.

“This is another 'dumpy' recipe for you, which means we just throw all of the ingredients into the slow cooker pot.”

All of the ingredients can go into the pot: the chicken, spices, garlic and ginger pastes, and Dean’s homemade curry base gravy. He continued: “I love this sort of cooking as it’s so easy and you can even get this ready the night before for convenience.”

Cooking and serving tips

Once all of the ingredients are in the pot, all you need to do is give them a stir, pop the lid on, and let the slow cooker work its magic. To help make the curry thick and rich, you want to add melted butter or ghee right before serving.

Slow cooker butter chicken curry recipe

Ingredients (serves four)

  • 500g chicken drum fillets
  • One tbsp heaped tomato puree
  • One heaped tbsp garam masala
  • One tsp ground cumin
  • One tsp turmeric
  • One tbsp dried fenugreek leaves
  • One tsp kashmiri chilli powder (optional)
  • Salt to taste
  • One tbsp garlic and ginger paste
  • 50g cashew nuts blitzed with 50ml water
  • One x 300g portion curry base gravy
  • 50g ghee or unsalted butter melted
  • Fresh coriander to garnish

Method

Pop all of the ingredients, except the butter and coriander, into the slow cooker pot then give a good stir to combine. Place the lid on and cook on the high setting for three hours or the low setting for six hours.

Just before serving, stir through the butter and fresh coriander then serve with some rice and a fluffy paratha.
