An 80-year-old Roman Nonna has revealed five strict kitchen rules that home cooks should follow to make authentic Italian dishes. The guidance was shared during a cooking class aboard the Celebrity Ascent Mediterranean cruise, where local matriarchs were brought on board to teach regional recipes.
Learning from Nonna Patrizia
Vickiie Oliphant cooked alongside Nonna Patrizia while travelling on the cruise last month. Together they shaped fresh dough for a baked gnocchi and assembled a classic tiramisu, with Patrizia passing down the golden principles she said every home cook should live by.
The first rule is to never mix garlic and onion. Combining them in the same dish overpowers the delicate natural flavours and is considered a major misstep in traditional Italian cooking.
Handling Basil and Tomato Sauce
Metal blades bruise and oxidise tender basil leaves, dulling their flavour and turning them dark. Patrizia advised tearing the leaves by hand or cutting them with a ceramic knife. When harvesting, she said to pinch from the top of the plant rather than stripping the mature lower leaves.
A classic red sauce relies on pure minimalism. Start with a soffritto base of finely diced onions, carrots, and celery cooked in olive oil, then add tomato passata and an equal amount of water. If using fresh whole tomatoes, blanch them for one minute to slip off the skins, then crush them into rustic chunks by hand before simmering.
Whisking and Tiramisu Tips
For stiff, cloud-like peaks, the whisk should move in a single continuous motion. Changing direction midway collapses the delicate air pockets that have been built, forcing you to start all over again.
Traditional tiramisu contains zero alcohol. Authentic recipes rely strictly on eggs, sugar, mascarpone, espresso, and ladyfingers. Patrizia also shared that the name translates to "pick-me-up," a nod to its 19th-century origins as an energy boost in Venetian brothels.
