In a post from May 2024, Laura demonstrated how to make a mini loaf using these two cupboard staples. The bread can be baked in an air fryer, making it a quick option for those short on time. Laura noted that the recipe can be adapted to be gluten-free by using gluten-free flour and adding a third of a teaspoon of xanthan gum.
Method and Cooking Times
To make the bread, mix six tablespoons of self-raising flour with four tablespoons of yoghurt until a dough forms. Dust hands with flour, shape the dough into a ball, knead briefly, and form it into a loaf or wide sausage shape. The dough should not be overly sticky.
Place the bread in the air fryer and cook at 200°C for five minutes. Laura advised that air fryers can vary, so if the loaf remains slightly doughy, continue baking for a few additional minutes. For those without an air fryer, the bread can be oven-baked for 12 to 15 minutes. Serve and eat immediately.
