Glasgow-born salad bar Sprigg has expanded to the West End for the first time. It marks the popular eatery's fourth branch in the city since opening almost a decade ago.
New Location on Byres Road
The new venue is located on Byres Road, between Hillhead Subway Station and the Botanic Gardens. Taking over the former Park Hi Tea Unit, the doors opened at 10am on Wednesday, July 22.
First opened in 2018, Sprigg was launched with the mission to "improve convenience food culture." It is known for its salad bowls and homemade soups made with nourishing, healthy ingredients.
First Expansion Outside City Centre
This marks the first time the diner has opened a branch outside Glasgow city centre. Its other locations include 241 Ingram Street, 264 Sauchiehall Street, and 31 Waterloo Street.
The new West End store offers the full Sprigg menu, including build-your-own salad bowls, loaded baked potatoes, homemade soups, and focaccia.
Interior Inspired by Glasgow Tenements
Designed to take inspiration from Glasgow's tenement closes, the interior features individually laid floor tiles, a "contemporary" aesthetic, and the brand's signature salad counter.
Ahead of the opening, Tom McDermott, founder of Sprigg, said: "We've been working hard behind the scenes to bring Sprigg to the West End, so we're delighted to finally be opening our doors on Byres Road. The response we've had from local people and businesses has been fantastic, and it's been great to see how much excitement there is around the opening. This was really important to us and we worked closely with Glasgow Planning & Friends of Glasgow West to ensure the shop honours the heritage of the area and contributes to the street scape."

Sprigg's expansion has been met with enthusiasm on Instagram. One fan wrote: "Absolute heaven! I am going there this weekend." Another said: "Buzzing for this new addition." A third commented: "Spriggs in every corner please!" And someone else called it "The best addition to Byres Road."
Other Openings in Scotland
Sprigg's fourth venue is the latest addition to Scotland's food scene. Aberdeen is set for a new Mediterranean-style diner, Mezzo, opening near the Trinity Centre in October. Designed as part restaurant, part bar, it is a new venture for chef Kevin Dalgleish, behind the award-winning Amuse restaurant.
Aberdeen is also home to Kaizen., a wellness café and social space similar to Sprigg, opened in May with a clean-eating menu. In Edinburgh, TikTok-viral SpudBros opened its first Express store on Lothian Road.
