Celebrity chef Jamie Oliver has shared a simple technique for cooking rice that he says makes it perfectly soft before serving. He revealed the method while appearing on fellow chef Theo Randall's YouTube channel, after the pair had prepared a Beef Stroganoff together — a dish Jamie admitted he had "no restraint or self control in stopping eating."
Stock and a tea towel
As the duo, who previously worked alongside each other at the River Café, sat down together, Theo turned his attention to the rice and praised it: "This looks amazing. The rice looks beautiful. Lovely, soft, succulent rice."
Jamie then explained his approach: "That rice. I didn't explain it because I was sort of too busy yapping doing other things but, I like stock with it."
"I just sweated off some onions in a little olive oil and butter, then put the rice in until they were translucent and then double the amount of light stock and then I tied a tea towel around the lid."
"Once it's cooked you turn it off and just let it rest and it seems to just absorb some of that excess moisture and you find, not specifically with this rice, but when you buy the long grain, it just seems to stretch."
Air fryer tip
Jamie has also claimed he uncovered a method to get the very best out of air fryers. In a clip posted on his Facebook page, he insisted he had discovered a way to get the most from the appliance.
Discussing a technique people could use every time, he said: "This is how you take your air fryer to the next level."
"Me and my team pushed the air fryer to its limit - and one of those ways was having thinned cooking of the top of that little tray and having other things reheating at the bottom."
Using a sweet potato recipe to illustrate his point, Jamie placed herbs and spices at the base of the fryer before sliding a tray back in and placing the sweet potato on the upper level. He explained: "But if you think about having meat or fish [dripping] onto beans, chickpeas, tomatoes [below], you can really max out flavour and efficiency really fast."
