Live Eat Learn prepared cauliflower six ways: raw, blanched, roasted, sautéed, microwaved, and steamed. Steaming came out on top for both taste and nutrient retention. The website stated: “To preserve the cauliflower’s natural flavors and nutrients, steaming is the way to go. It’s the most gentle cooking method (meaning it retains the most vitamins and minerals) and is incredibly straightforward.”
How to Steam Cauliflower
To steam, boil 1-2 cm of water in a saucepan and place a steamer basket inside, ensuring it rests above the water without touching. Add cauliflower and sauté for three to four minutes until browning. Season to taste. For a quicker option, microwaving with three tablespoons of water in a covered bowl for 4-5 minutes yields similar results, though slightly less tasty.
