A traditional meat mincer is the one kitchen item that makes the perfect British sausage, according to a master butcher. Tim Wilson, founder of the Ginger Pig butchery chain, says achieving the rich bite and juicy texture of a proper banger comes down to a specific preparation method using this tool.

The Art of the British Banger

Wilson, whose passion for sausage making started in childhood, emphasises that quality ingredients and craftsmanship are vital. "If you give the finest pork in the world to someone not in love with making sausages, it won’t work," he said in an interview with Borough Market. "English sausages are just pork, pork fat, herbs if you want them, and some form of breadcrumb."

He explains the role of breadcrumbs: "You need bread to absorb the fat and retain the flavours – if you just put pork into a skin, as soon as you cooked it all, the fat would run out." Getting this wrong risks a dry, fat-drained banger or a pasty, unappealing filling.

Golden Rules for Perfect Sausages

Wilson has shared his golden rules for making sausages at home. First, always start with fresh meat. Use bone-in fresh pork cut into strips with the fat left on, and never mix fresh pork with meat from older deliveries.

Second, incorporating high-quality breadcrumbs is essential. Pure pork inside a casing will release all its fat during cooking, whereas good breadcrumbs help absorb that fat and lock in the flavour.

Finally, ensure you achieve tight packing when stuffing the casings. Filling natural casings - such as hog skins for large sausages or lamb intestines for chipolatas - firmly promotes even cooking and results in a far more appetising appearance.

The Secret Weapon: A Meat Mincer

Wilson's single indispensable item is a traditional meat mincer. To get the signature coarse texture that sets craft butcher bangers apart from mass-produced supermarket varieties, he swears by a two-stage process using the tool.

First, unseasoned pork strips drop through the mincer on a coarse setting to establish a solid base texture. After mixing in herbs and high-quality breadcrumbs, the mixture runs through the mincer a second time on a lighter setting. This double-pass method thoroughly incorporates every flavour without turning the meat into a smooth, rubbery paste.

At Ginger Pig, sausage makers experiment with roughly 20 varieties at any given time, ranging from standard classics to seasonal trials like a Wimbledon-inspired strawberry banger. For winter, Wilson's personal favourite recipe combines pork belly, bread rusk, garlic, juniper berries and grated orange rind.
