MasterChef judge Marcus Wareing has shared a crucial tip for making perfect pancakes: always heat the pan before adding the batter. In a TikTok video, the 56-year-old chef demonstrated his classic pancake recipe, emphasizing that this step is 'really important' for achieving the best results.
The MasterChef's Classic Pancake Recipe
Wareing began by sieving plain flour into a mixing bowl, then added sugar and cracked four egg yolks into the mixture. He poured in milk and whisked the ingredients to create a 'nice consistency' that is 'not too thick, not too thin'.
'This is the only pancake recipe you will ever need,' Wareing declared in the video, which was posted on the MasterChef UK TikTok account.
The Essential Step: Preheat the Pan
Wareing stressed that the pan must be warm before any batter is added. 'Just put a little bit of oil into the pan,' he advised, then poured in his mixture to create the first pancake.
This tip ensures even cooking and prevents the batter from sticking, resulting in a perfectly golden pancake every time.
Expert Advice on Batter Resting
London chef and restaurant owner Nima Safaei also shared his expertise, highlighting the value of patience in pancake making. 'A good batter should always rest, even briefly,' he said. 'Thirty minutes allows the mixture to relax and improves the texture of the pancakes.'
Popular Toppings in the UK
A BBC poll revealed that lemon and sugar remain the most popular pancake topping in the UK, chosen by 31% of voters. Chocolate hazelnut spread, sometimes paired with banana, followed at 17%, while maple syrup came in third at 14%. Eight per cent opted for bacon, served with or without syrup.
Other favourite toppings include fresh fruit such as blueberries, bananas, or applesauce, ice cream, and chocolate sauce. More adventurous combinations include smoked salmon and cream cheese for a savoury twist.
Chef's Personal Favourites
Safaei admitted that 'simplicity wins' for him, but encouraged foodies to experiment. 'Lemon and sugar is timeless,' he said. 'Nutella is always a favourite. Fresh berries with cream feel light and elegant.'
For a Mediterranean twist, he recommended trying 'mascarpone with honey and toasted hazelnuts', calling it 'indulgent, balanced, and delicious'.
