Silken Tofu for a Super Creamy Dressing
The BOSH! team shared their green goddess salad recipe on Instagram, which uses silken tofu blended into the dressing. The ingredient creates a "super creamy" texture without any dairy. The recipe is suitable for both vegetarians and vegans and provides a protein and fibre boost.
Alongside the tofu, the salad includes butter beans, which add extra fibre to an already healthy lunch. The full recipe serves two to three people.
Recipe Details and Ingredients
For the dressing, the recipe calls for 300g of silken tofu, 30g of fresh basil, 50g of baby spinach, one avocado, the juice of two lemons, two tablespoons of apple cider vinegar, one garlic clove, 25g of nutritional yeast, ice-cold water, and salt to taste.
For the salad, you will need two spring onions, one cucumber, two romaine lettuce hearts, 700g of butter beans, and four tablespoons of mixed seeds.

To make the dressing, blend the silken tofu, basil, spinach, avocado, lemon juice, apple cider vinegar, garlic, and nutritional yeast until smooth. Add splashes of ice-cold water to loosen if necessary, then season with salt. Drain and rinse the butter beans, slice the spring onions, halve the cucumber lengthways, scoop out the seeds, and dice. Shred the romaine lettuce into 1cm strips. Add the beans, cucumber, and lettuce to a large bowl, pour over the dressing, toss, and serve immediately.
