Satay Beans on Toast: A Simple Comfort Food Upgrade
Recipe developer Georgia Hughes has shared a simple twist on the classic beans on toast, using two everyday store cupboard ingredients to transform the dish into a satisfying comfort meal. The recipe, featured on Channel 4's Served TikTok, adds peanut butter and curry powder to create satay beans on toast.
Georgia said: "These are my satay beans on toast. A proper comfort food upgrade. Taking the humble bean and giving it a glow up. That is delicious."
Ingredients and Method
The recipe uses two slices of sourdough, one tin of butter beans, two diced shallots, one tablespoon of tomato paste, one teaspoon of curry powder, one tablespoon of peanut butter, juice of half a lime, one teaspoon of light soy sauce, and one tablespoon of honey. Toppings include peanuts, pickled red onions, and spring onions.
Method: Heat olive oil in a pan over medium heat. Add shallots and cook for six minutes until softened. Stir in tomato paste and curry powder, cooking for one to two minutes. Add butter beans (drained and rinsed if canned, with brine if jarred) along with two tablespoons of water or brine. Stir in peanut butter, soy sauce, lime juice, and honey, then simmer for a few minutes. Spoon over buttered toast and top with peanuts, pickled onions, and spring onions.

Georgia described beans on toast as her go-to meal for evenings when she cannot face cooking. The satay variation adds a spicy and flavoursome kick while keeping the dish comforting and nostalgic.
