Method
To begin, simply chop up your watermelon into chunks of whatever size you desire and throw them into a bowl. Next, prepare some chopped cucumber and thinly sliced red onions and add them to the same dish. Take the mint leaves and roll them up before finely slicing them with a knife and putting them on top of the rest of the contents of the bowl. Zest your lime using a zester or fine grater and add the shreds to the bowl. To season, add salt and pepper, a drizzle of olive oil and the juice of the lime. Lastly, sprinkle clumps of feta cheese on top of the entire recipe and give it a good mix in the bowl. Once tossed together, serve up on plates and enjoy!
