Food experts at The Kitchn have discovered that wrapping cucumbers in paper towels and placing them in a sealed zip-lock bag on the top shelf of the refrigerator can keep them fresh and firm for up to 19 days. This method outperformed eight other storage techniques tested in the trial.

Why Cucumbers Spoil Quickly

Cucumbers are highly sensitive to cold temperatures. When stored below 10°C, they develop chilling injuries that cause bruising, shrivelling, and a slimy texture. Most people store cucumbers in the fridge without protection, leading to spoilage within a week.

Storage Methods Tested

The Kitchn evaluated nine approaches to cucumber storage. Leaving cucumbers unwrapped on the counter or in the fridge resulted in spoilage within 5–7 days. Wrapping in cling film extended freshness slightly, but the cucumber turned slimy by day eight.

Wrapping in paper towels and placing in a loose bag in the crisper drawer kept the cucumber fresh for 10 days. Cling film inside the crisper drawer extended that to 12 days. A zip-lock bag with a spoon on the fridge shelf kept it usable for 14 days.

Winning Technique: 19 Days of Freshness

The top method involved wrapping the cucumber in paper towels and sealing it in a zip-lock bag on an upper fridge shelf. After eight days, the paper towels were damp but the cucumber remained pristine. On day 15, it was still perfect; by day 16, it remained in excellent shape. The experts pushed further, and the cucumber lasted a total of 19 days.

According to The Kitchn: "The towel-wrapping method was interesting. It helped to wick away the moisture that seemed to contribute to sliminess and squishy spots, and the sealed bag seemed to offer more protection than an unsealed bag."

Key Factors for Longevity

Both moisture loss and moisture buildup contribute to spoilage. Protecting cucumbers in some manner—whether wrapping in paper towels or cling film, or placing in a bag—offers the greatest longevity. The dual layer of protection, using paper towels to absorb surface moisture combined with a sealed plastic bag to shield from external elements, keeps cucumbers fresh for an impressively long time.
