Cheese Toastie Upgrade with Egg: A Delicious Twist

There are plenty of ways to improve a standard cheese toastie, and I recently discovered a game-changing addition that I can't wait to make again. By adding one simple fridge staple, I transformed my usual lunch into something extraordinary.

Why Add an Egg to Your Cheese Toastie?

Cheese toasties are a delicious and popular lunch option, super easy to make no matter which method you use. While there are plenty of additions to take your toastie up a notch—from ham to different cheeses or even smoked salmon—I found a new twist on the food blog Toaster Oven Love: egg and cheese toasts. I figured it would be easy to turn this into a toastie.

For the bread, I used sourdough, and for the cheese, I opted for grated mozzarella, my personal favourite for a toastie. The egg and cheese mixture is combined and spread on the bread before baking, creating a fluffy, savory filling.

My Mistake and What I Learned

While the recipe was simple, I made a pretty big mistake: I sliced my bread too thick, resulting in a sandwich that was just a tad too big. Despite this, I'll definitely make this recipe again, either by slicing my bread thinner or by purchasing pre-sliced bread. The egg made for a nice addition to what would otherwise be a rather plain toastie.

You could certainly add more to the toastie if you wanted. Next time, I might add some smashed avocado and see how that goes.

How to Make a Cheese and Egg Toastie

The recipe took less than 15 minutes.

Ingredients

  • Two slices of bread
  • One egg
  • Your choice of cheese, shredded or grated
  • Salt and pepper, to taste
  • Cayenne pepper, if desired
  • Your choice of fresh herbs

Method

  1. Start by lightly toasting the bread and preheating the oven to 200°C.
  2. While the oven heats up, beat the egg in a bowl, combining the whites and yolk.
  3. Add the cheese to the egg and mix, then add the salt and pepper.
  4. Spread the mixture on the lightly toasted bread, and sprinkle on some cayenne pepper.
  5. Bake until the egg mixture puffs and begins to brown. Either serve as cheese on toast, or combine to create a sandwich.
